1 cup blueberries
2 cups strawberries
1 mixed cup raspberries and mulberries
1 small cup sugar
1 squeezed lemon
2 teaspoons finely grated lemon rind
In a small stainless steel pot, crush all the berries with a potato masher.
Keep a mix of whole berries to add with the sugar, lemon juice and lemon rind.
Bring to a boil over medium-high heat and boil for 15 to 20 minutes or until thick, stirring often.
Pour jam into a jar of choice to within 1/4” of top rim.
It’s Berry season in South Africa , Cape Town. Summer sort of wants to start but we have had some breakfast in bed days with over cast weather perfect for hot oats with berries in bed.
I skipped a post last week and decided to combine a series of images seeing that I have been shooting a lot of images of berries and all the wonderful colors of summer.I decided to conclude my berry post this week by making a Jam. It is the first attempt I have taken on making Jam. I must be honest it is really easy and I love the freshness of the Jam I made. It tastes and looks like summer. I crisped a few pieces of Ciabatta bread in the oven for 15 minutes and put the berry jam on top which was a delicious way to start the day. I think this recipe with the lemon really keeps the jam’s taste fresh and not too sweet ideal for a summer morning breakfast.
